Paolo Fontana
Clubhouse Manager 
Born in New York City and raised on Long Island by immigrant Sicilian parents, Paolo Fontana's passion for cooking ignited early, inspired by countless hours spent in the kitchen alongside his mother. This early culinary curiosity blossomed into a lifelong journey, deeply rooted in both his heritage and an expansive professional education. Paolo honed his skills and knowledge at esteemed institutions such as Avellino, Italy, The Culinary Institute of America in New York, Stony Brook University, and New York University, forming a solid foundation for his diverse culinary expertise.
Throughout his illustrious career, Chef Paolo has learned from and worked alongside globally recognized chefs, contributing his talents to iconic New York eateries including Union Square Café, Babbo, Gramercy Tavern, and Craft. Notably, he worked at Restaurant Mirabelle under the tutelage of the celebrated Chef Guy Reuge, a La Toque d’Argent awardee. His quest for culinary excellence led him to various corners of the globe and allowed him the privilege of sharing his knowledge as a culinary instructor at NYIT in New York.
After achieving remarkable success in renowned kitchens worldwide and co-owning the bustling Tampa restaurant Bracci, Paolo pursued a dream to create something uniquely his own. He became the executive chef and owner of the Simons Center for Geometry and Physics Café (SCGP Café) in Stony Brook, NY, and lent his expertise as a consultant to major food corporations. Beyond his professional ventures, Paolo cherishes time spent with his family, cultivating his organic garden, keeping bees, and mastering the art of glassblowing to create beautiful glass marbles.
Today, Paolo Fontana brings his rich tapestry of culinary prowess and leadership skills to St. George's Golf and Country Club as the Clubhouse Manager. Here, he continues to enchant members and guests alike with his gastronomic artistry, drawing on his love for French, Italian, and American cuisines, and his passion for bread and pastry making. Paolo's journey from a young boy inspired by Sicilian culinary traditions to the guiding force behind the esteemed Clubhouse of St. George's Golf and Country Club is a testament to his dedication, skill, and unwavering love for the culinary arts.
